~Chilli Paneer~

Welcome to another delicious recipe! It’s ‘Chilli Paneer’ today. As soon as we hear the name ‘Paneer’, our mouth waters. Paneer, simply is an Indian Cottage Cheese. It’s also called Chhena. Firm yet soft, and very tasty. Sits perfect in any spicy and delicious gravy curries. It’s very easy to make fresh Paneer at home and I’ll soon add that post too. I do not have decent photographs of that recipe yet. These days Paneer is very easily available at stores so, not a big deal but, fresh is always fresh! 🙂 Not only just for the gravy curries but it’s used in several other dishes too. Countless recipes, like in Rice varieties, Dry curries, Gravy curries, Sides, Stuffings, Stir Fries, Fritters and so on.. Chilli Paneer can be served as a snack/Side dish or with pulkas too. Soft fried Paneer cubes accompanied with crunchy Bell peppers(Capsicum) and onions, coated with a spice sauce mix is a must to taste dish. As I always say, in dishes like this, spice level can be altered according to our own tastes. So here’s the recipe, Happy Cooking!

Ingredients:

200 gms Paneer – Cubed(cut into cubes)
2 tbsp Corn Starch
2 tbsp All purpose flour/Maida
1/4th tsp Salt for batter, and later as needed
1/4th tsp Ajinomoto
2 tsp Soy Sauce
1 tsp Chilli Sauce
2 tsp chinese Hot & Sour Sauce(optional)
1 tsp Lemon juice
1 tsp Tomato Sauce
Few pinches Pepper powder
2 tsp Red chilli flakes(optional)
1 Bell Pepper(Capsicum) – chopped into squares
4 Green Chillies
4 Garlic cloves – very finely chopped
1 Onion – Chopped into Squares/cubes
Oil for deep fry

Method:

1. Heat oil in a skillet for deep frying. You can totally skip this step if you are concerned about deep frying. You can rather heat 2 tbsp oil in a pan, fry Paneer until golden brown and then collect them in a plate and keep aside and later follow from step no. 5
2. Take corn starch and flour/maida into a bowl, add 1/4th tsp salt, mix well and add water to make a thick batter, a consistency that can coat the paneer cubes on all sides. Add few drops of soy sauce if you like. I have also added crushed kasoori methi about 1/2 tsp. It’s totally optional. Now mix well again and keep aside.
3. Now add the Paneer cubes in this batter and with a spoon, coat all sides of paneer, with the batter.

4. Deep fry the coated paneer in batches, until golden brown and collect them in a plate over a paper towel.

5. Prepare the sauce. Mix soy, hot and sour, chilli, tomato sauces, lemon juice, pepper powder and Ajinomoto in a bowl.

6. Now heat 1 tbsp oil in a pan, add chopped onions, green chillies and garlic. Fry them for about a minute and then add bell pepper. Sprinkle little salt and fry for about 2 minutes. Now, add the above sauce mix and saute for about 1 minute.

7. Add fried Paneer and mix well with the bell peppers and the spice mix. Lastly, add the red chilli flakes and give it quick stir.

8. Collect it in the serving plate and enjoy with pulkas or just with a hot cup of Tea.
