Ummm.. Yumm for me! I just love this nice.. smooth.. creamy soup. It fills my heart specially on a chill day. Last time I had it when I visited Ikea. It was reaaally yummy. A spark in my mind which said I should post this recipe soon here. Making soups is fun and healthy too. Health benefits of Broccoli is definitely known. It’s rich in Vitamins K,C,A and has a very positive impact on body’s detoxification system. It also does it’s best when consumed steamed. In soups, it has to be cooked soft but otherwise, try to consume it steamed. My coming posts include one such wonderful recipe with Broccoli. Don’t miss it 🙂 Now here is the soup recipe.. 1 head Broccoli – Separate the florets and give them a rough chop
2 cups Milk(I used 1% milk)
1/4 cup Heavy Cream
Pinch of Nutmeg
Few turns of Pepper powder
1/2 cup Parmesan Cheese
2 tbsp All Purpose Flour
1 medium Onion – chopped finely
2 tbsp butter – unsalted
Salt to taste
1. Take a heavy bottomed sauce pan, melt butter and saute onion until transparent, add flour and fry for a while.
2. Add milk and heavy cream. Give it a stir, add nutmeg and pepper. Bring milk to boil and then add the Broccoli florets.
3. Close the lid, allow to cook on a medium low flame until the florets are really soft .
4. Collect the florets slowly to a mixi jar with little liquid too, so that it can run smoothly while blending.
